Probably one of my favourite desserts! It is a classic recipe invented in the 19th century by a Parisian pastry chef. It is made of my homemade buttery shortcrust, a Frangipani (almond cream) and poached pears locally sourced.
I love the combination of the firm and spicy pears and the soft buttery almond base. Served hot or warm. It is just divine!
This tart is rather large and would serve 12-16 pieces (26cm diameter) as it is quite filling.
