Banana cakes are just a childhood favourite for almost everyone. I can't tell you how many times I have made this cake now but it is always one that my family and guests would compliment me for as it is moist, fragrant and with a hint of Rum flavour (not alcohol) and vanilla, it takes you right back to memory lane... For the Gluten Free option, I chose buckwheat blended with rice flours, for the animal fat free option, I replaced butter with olive oil and you would not tell the difference!
