I have been baking these carrot cakes for years and have replaced animal fat with olive oil, it is rich in flavours with a blend of spices including cinnamon or cloves. It is very fragrant and such a shame you can't smell it when it comes out of the oven! it is divine and always a hit! Both options: Original and Gluten Free have frosting and crushed walnuts on them.
